Harvesting in Valpolicella: A Millennia-Old Art
Harvesting in Valpolicella is not just an agricultural process but a millennia-old art passed down through generations. It requires keen observation and a profound knowledge of the land. Every detail matters to obtain perfect grapes: from the altitude and latitude of the vineyards to sun exposure, from the type of grape to the variety of the desired wine. Even within the same vineyard, temperature and humidity differences can make the process even more complex. The ripening of the grape is gradual: at first, the unripe grape contains a high acid content and few sugars. Over time, sugars increase and acids decrease. Only when the grape is ripe are accurate analyses conducted to determine the desired levels of sugars and acidity.

Generally, harvesting starts between August and September for early-ripening grapes, such as those used to produce sparkling wines or some dessert wines. Most grapes are harvested between September and October, while some late-ripening varieties are gathered between October and November, sometimes even in December. The ripening of the grape is influenced by several factors. South-facing vineyards on infertile, well-drained soils tend to ripen grapes earlier. Vines with old plants or low-trained systems contribute to early ripening. Additionally, the climate, with less rainfall and higher temperatures, accelerates the ripening process, a crucial factor for Valpolicella harvests in recent years.
